Gourmet Chicken Salad
This chicken salad has a little tang from sour cream and sweetness from sugar. It also contains onions, carrot , celery, grapes, pecans, and ranch dressing in addition to the usual chicken and mayonnaise. It serves up well on a bed of lettuce or in a pita pocket.
Servings: 6 Done in: 30 minutes plus chill time Ingredients:
2 whole large chicken breasts, cooked and diced (about 3 cups) 1 cup mayo 1/2 cup sour cream 1 tbsp. ranch dressing 2 tbsp. chopped red onion 2 tbsp. chopped celery 1/4 shredded carrots 8 red seedless grapes cut in half 1 tbsp sugar 1/2 cup finely chopped pecans
Directions:
1. Add all ingredients except grapes to a large bowl. 2. Mix thoroughly, then add grapes for final tossing. 3. Refrigerate at least 2 hours. 4. Toss before serving and add mayo if it is a little dry.
